Potato tacos are a common Mexican street food, often served with chorizo. If you can't find Mexican chorizo, you can substitute ground beef, or leave the meat out for a tasty vegetarian option. Either way, these spicy potato soft tacos are the perfect easy weeknight meal!

  • 3 tablespoons vegetable oil
  • Salt and pepper
